One-Handed Snack - Dates with Nut Butter Bites

Dates are a great postpartum snack as they are packed with natural sugar for a quick energy boost and are high in fiber to aid digestion. Nut butter is also a great addition as it is a good source of protein and healthy fats. This recipe for date and nut butter bites is easy to make and eat with just one hand, perfect for new mothers (hello breastfeeding and contact naps!).

Ingredients:

10-12 Medjool dates, pitted

2-3 tablespoons of your preferred nut butter (such as almond, peanut, or cashew butter)

Optional toppings: shredded coconut, any chopped nuts, pomegranate, or chocolate

Method:

Take a Medjool date and use your thumb to make an indentation in the center where the pit used to be.

Scoop a small amount of nut butter (about 1/2 teaspoon) into the indentation.

Use your fingers to press the sides of the date together to seal the nut butter inside.

Repeat with the remaining dates and nut butter.

If desired, roll the finished bites in shredded coconut, chopped nuts, or chocolate chips to add texture and flavour.

Store in an airtight container in the refrigerator for up to a week.
